Pico de Gallo is an incredibly easy and fresh topping for tacos, nachos, burgers, and more. It is basically the chunky, unblended version of salsa.
It is also known as Salsa Fresca, or literally translated: Beak of the Rooster.
Large tomato or red pepper,
diced or chopped
2 large mangos, chopped
1/2 red onion, diced
1/2 jalapeño, seeded and diced
2 tbsp. cilantro, chopped
Juice from 1/2 lime
Pinch of salt
- Combine the chopped tomato, mango, onion, jalapeño, and cilantro in a small mixing bowl.
- Sprinkle with salt and add the lime juice, mix well.
- Serve as a side or topping.
Pico de Gallo can be made ahead of time, just leave off the salt and lime juice until serving.
